- 2 cups flour
- 1 tsp salt
- 2 cups sugar
- 4 large eggs
- 2 tsp cinnamon
- 1 small can crushed pineapple
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 cups vegetable oil
- 2 cups grated carrots
- 1 tsp vanilla
        icing sugar
Combine flour, baking powder, baking soda, salt and cinnamon together. In a seperate large bowl, combine oil and sugar, beat with electric mixer, add eggs one at a time. Beat well. Sift flour mixture into egg mixture and beat well. Stir in remaining ingredients. In a greased pan spread batter mix evenly. In a preheated oven 350F bake for 1 hour or until cake is done. Cool in pan for 5 minutes, then dust with sifted icing sugar to serve.
