Curry Beef

beef recipes
  • 1/2 cup chopped onion
  • 2 teaspoons curry powder
  • 1 tablespoon cooking oil
  • 2 cups cubed cooked beef
  • 2 small apples, peeled and sliced or chopped (1 cup)
  • 3/4 cup water
  • 1/2 cup raisins
  • 1 teaspoon inkstand beef bouillon granules
  • 1/2 teaspoon salt
  • 1/4 cup cold water
  • 1 tablespoon all-purpose flour
  • Hot cooked rice
  • Condiments (optional)

In a 10 inch skillet cook onion and curry powder in hot oil till onion is tender. Stir in cubed beef, sliced or chopped apples, the 3/4 cup water, raisins, instant beef bouillon granules, and salt. Cover and simmer for 10 minutes.

Blend the 1/4 cup cold water with flour; stir into skillet mixture. Cook and stir till thickened and bubbly. Season to taste with additional salt and pepper. Serve over hot cooked rice. If desired, pass condiments, such as bacon bits, shredded coconut, chutney, peanuts, and sliced bananas. Serves 4-5.

Beef Wellington

  • 1 4 pound beef tenderloin
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup shortening
  • 1/3 to 1/2 cup cold water
  • 2 23/4 ounce cans liver pâté
  • 1 beaten egg
  • 1 1/2 cups water
  • 2 teaspoons instant beef bouillon granules
  • 1/2 cup cold water
  • 1/4 cup all-purpose flour
  • 1/3 cup Burgundy
  • 1/2 teaspoon dried basil, crushed
  • Salt, pepper and parley sprigs

Put beef on rack in a shallow roasting pan. Insert a meat thermometer. Roast at 425 degrees till thermometer registers 130 degrees (approx 45 min). Remove from pan; cool. Reserve the drippings.

Stir 2 cups flour with 1/2 teaspoon salt; cut in shortening till size of small peas. Add 1/3 to 1/2 cup cold water, 1 tablespoon at a time, tossing with fork till all is moistened. Form into ball. On a floured surface roll to a 14x12 inch rectangle; spread with pâté to within 1/2 inch of edges.

Center meat on top. Overlap long sides. Brush on egg; seal. Trim the excess pastry from ends; fold up. Brush on egg; seal. Place seam down, on a greased baking sheet. Reroll trimmings; make cut-outs. Place on meat; brush remaining egg over pastry. Bake at 425 degrees for 35 minutes (meat will be rare).

Heat and stir reserved drippings with 1 1/2 cups water and bouillon granules till granules dissolve. Miss 1/2 cup cold water with 1/4 cup flour; stir into hot mixture with Burgundy and basil. Cook and stir till bubbly; season with salt and pepper. Garnish with parsley; pass gravy. Serves 12.

Teriyaki Roast Beef

  • 1 cup soya sauce
  • 1/2 cup cooking oil
  • 1/4 cup light molasses
  • 1 tbsp ground ginger
  • 1 tbsp dry mustard
  • 8 minced cloves of garlic
  • 1 6-7 pound boneless beef rib roast

Heat oven to 325 degrees. In a bowl combine soya sauce, cooking oil, molasses, ground ginger, dry mustard and garlic. Add meat to marinade mixture, turning to coat. Cover and refrigerate overnight, occasionally spooning the marinade over the meat.

Place roast on rack in a shallow roasting pan. While meat is roasting, baste several times with the left over marinade. Remove from oven, cover with foil and let stand for about 15 minutes. Remove strings and carve thinly across the grain.

Rare about 3 hours, medium about 4 hours, well done about 4 3/4 hours.

Beef Flautas

  • 2 cups thinkly sliced cooked beef
  • 1 tbsp vegetable oil
  • 1 tbsp red wine vinegar
  • 1 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/8 tsp garlic powder
  • 12 corn tortillas
  • Oil
  • Avacado Sauce (see recipe)

In a skillet heat 1 tbsp oil and brown meat. Drain. Add in red wine vinegar, chili powder, salt, oregano and garlic powder to the meat. Toss to coat and set aside.

Pour another tsp of oil into a deep saucepan and heat. Dip each tortilla into hot oil just till soft and limp but not browned. Drain on paper towel.

To assemble: divide beef among tortillas, roll each tortilla and secure with a wooden pick. Fry in hot oil sauce pan until crisp. Serve with avacado sauce.

Southern Comfort and Ketchup Meatballs with slow cooker option

  • One 2 litre bottle of ketchup
  • One litre bottle of Heinz kickers ketchup
  • One 500 litre bottle of chilli sauce
  • ½ cup brown sugar
  • 2 cups of southern comfort
  • 4 cloves of garlic
  • 2 tablespoons of Worcestershire sauce
  • 1 teaspoon of lemon
  • 2 teaspoons of chilli powder
  • 1 large Spanish onion
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 4 lbs of ground beef

Brown the meat balls and then add to the sauce and cook for 2 hours. Finely chop or dice onion and garlic. In a Large sauce pan put 2 teaspoons of extra virgin olive oil on medium heat and sweat onions and garlic. Mix in all other ingredients, stir occasionally. Once boiling reduces heat to low to simmer add meatballs and cook for 2 hours.

For slow cooker option, brown meatballs slightly then put in the slow cooker for 4 hours (check after 3 hours to see if meat meatballs are done).

Sloppy Sausage Joes Recipe

  • 2 tsp vegetable oil
  • 3/4 lb sweet Italian sausage
  • 1 chopped sweet pepper
  • 1 cup sliced mushromms
  • 1 tsp oregano
  • 1 tsp salt
  • 6 kaiser rolls
  • 3/4 lb ground beef
  • 2 chopped onions
  • 1 chopped zucchini
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 1/4 tsp pepper

Heat oil, cook meat for 5 minutes until no longer pink. Drain fat. Cook onion and pepper for 2 minutes. Add zucchini, mushrooms, garlic and oregano for 4 minutes. Add meat and remaining ingredients. Bring to boil. Simmer 20 minutes. Serve over warm buns.

Sloppy Joes Recipe

  • 1 lb hamburger
  • 1/2 cup onion
  • 1/3 cup celery
  • 1/4 cup water
  • 5 buns, split and toasted
  • 1/2 lb bacon
  • 1/3 cup green pepper
  • 1 can tomato paste or 1/2 cup ketchup
  • 1 tbsp worchestershire sauce
  • season to taste

Cook bacon in fry pan, remove once done; cut into pieces. Cook and stir hamburger and onion until hamburger is light brown; drain; add bacon. Stir in remaining ingredients except buns. Cover and cook over low heat until vegetables are tender, 10 - 15 minutes. Fill buns with beef mixture and enjoy.

Herbed Beef and Tomatoes Recipe

  • 1 medium onion
  • 2 tbsp cooking oil
  • 1 clove garlic, minced
  • 1/2 tsp rosemary
  • 1/4 tsp paprika
  • 1 - 2 lb round steak 3/4" thick
  • 1 cup beef broth
  • 1 tsp worchestershire sauce
  • 1/2 tsp salt
  • 1/8 tsp pepper

  • 2 tbsp cold water
  • 3 tbsp cornstarch
  • 1 tbsp soy sauce
  • 3 tomatoes, peeled and cut into wedges

Seperate onion into rings and place in crock pot. Trim fat from meat and cut into 2 1/2 inch strips. Brown meat in oil; drain. Stir into crock pot with broth, garlic, worchestershire sauce, rosemary, salt, paprika and pepper. Cover and cook on low heat setting for 8 - 10 hours.

Turn to high heat setting. Skim off fat. Blend in water and soya sauce into cornstarch. Stir into hot mixture. Add tomatoes on top. Cover and cook another 15 - 20 minutes until slightly thickened. Serve over noodles. Top with parsley. Serves 5 - 6.

  • 2 lbs stewing beef
  • 1 - 10 1/2 oz can cream of mushroom soup
  • 1/2 cup red wine
  • 1 envelope onion soup mix
  • 1 - 4 oz can whole mushrooms

Combine all ingredients ingredients in a crock pot. Stir together well. Cover and cook on low for 8 - 12 hours. Serve with egg noodles or rice. This recipe may be doubled.

  • l lb ground beef
  • 2 tbsp chopped onion
  • 1 1/2 cups hot water
  • 1/2 tsp chili powder
  • 1 cup grated cheese
  • 2 tsp cooking oil
  • 1 8 oz can tomato juice
  • 2 cups wide egg noodles
  • 1 - 20 oz can cream style corm

Heat oil in heavy pan, add beef and onion and brown. Stir in tomato sauce, hot water, noodles, salt, pepper and chili powder. Simmer for 2 minutes. Stir in corn. Mix together and place in a casserole, top with cheese. Bake at 350F for 45 minutes.

Sweet and Sour Meatballs Recipe

Sauce;

  • 2 cloves garlic
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tbsp mustard
  • 1 cup water
  • 2 tbsp butter
  • 2/3 cup chili sauce
  • 2 tbsp worchestershire sauce
  • dash of salt

Put all the above ingredients into a large pot on medium heat until meatballs are ready.

Meatballs;

  • 2lbs hamburger meat
  • 2 eggs
  • 1 clove garlic
  • 1/2 cup bread crumbs
  • salt and pepper

Mix all ingredients together and form into golf ball size meatballs. Bring the sauce to a boil and add the meatballs one at a time. When all the meatballs are in turn heat down to medium and cook for about 1 hour, stirring occasionally so that they won't stick. Serve over rice or pasta.
