Russian Black Bread

bread recipes
  • 1 1/2 cups water
  • 2 tablespoons cider vinegar
  • 2 1/2 cups bread flour
  • 1 cup rye flour
  • 1 teaspoon salt
  • 2 tablespoons margarine
  • 2 tablespoons dark corn syrup
  • 1 tablespoon brown sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon instant coffee granules
  • 1 tablespoon caraway seed
  • 1/4 teaspoon fennel seed (optional)
  • 2 teaspoons active dry yeast

Place ingredients into the bread machine in order suggested by the manufacturer. Use the whole wheat, regular crust setting. After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.

Zuchini Bread Recipe

  • 4 eggs
  • 2 cups sugar
  • 1 cup oil
  • 3 1/2 cups flour
  • 1 1/2 tsp baking soda
  • a pinch of salt
  • 2 cups grated zuchini
  • 1 cup raisins (opt)
  • 1 tsp vanilla
  • 1 tsp cinnamon

Beat eggs, add sugar and oil. In another bowl mix together flour, salt, baking powder, soda and cinnamon. Add to liquid mixture, stir. Add zuchini, raisins and vanilla. Place in greased loaf pan and bake for 55 to 60 minutes at 350F.

Cheese Bread Recipe

  • 1 french bread (Baguette)
  • Mayonnaise (enough to bind)
  • Mild cheddar cheese (grated)(Marble, white and orange looks nice)
  • pepper (freshly ground tastes best)
  • Green onion (opt)

Slice bread, place on cookie sheet, spread mixture, bake at about 300F until bread is slightly toasted and cheese is melted.

Bread Rolls Recipe

In a large bowl, mix 2 cups flour, 1/2 cup sugar, 1 1/2 tso salt & 2 pkg undissolved dry active yeast. Combine 1 1/4 cups water, 1/2 cup milk & 1/3 cup marg in a pot, heat until liquids are very warm (120F to 130F). Gradually add to dry ingredients. Beat 1 minute at medium speed of electric mixer, scraping bowl occasionally. Add 2 eggs (room temperature) & 1/2 cup flour, beat at high speed for 2 minutes scraping bowl occasionally. Stir in enough flour (up to 3 cups), to make soft dough. Turn onto floured board, knead until smooth and elasticy (8 - 10 minutes). Cover & let rest 20 minutes. Punch down dough, divide into 48 pieces, form into shapes if desired. Place on greased baking sheets. Cover with plastic wrap & foil sealing well. Freeze until firm, transfer into plastic bag, freeze up to 4 weeks.

Remove from freezer, place on greased baking sheet. Cover & let rise in warm place free of drafts until double in bulk, about 1 1/2 hours. Bake at 350F for 15 minutes or until golden brown. Remove from baking sheet & cool on wire rack.

AppleSauce Bread Recipe

  • 2 cups whole wheat flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 cup applesauce
  • 1/2 tsp vanilla
  • 1 cup raisins
  • 1/2 cup chopped walnuts (opt)

Sift flour, baking soda, baking powder, salt, cinnamon & brown sugar, through a sifter into a bowl. Combine liquid ingredients in another bowl. Add to the dry ingredients, mixing lightly but thoroughly. Fold in raisins & walnuts. Turn inot a greased 9 1/4 x 5 x 2 1/2 inch loaf pan. Bake at 350 F for approximently 1 hour. Cool.

  • 2 1/2 cups flour
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup white vinegar
  • 1 tsp ginger
  • 1/4 tsp crushed cloves
  • 1 1/2 tsp baking soda
  • 1/2 cup shortening
  • 1 cup molasses
  • 1 cup boiling water
  • 1 tsp cinnamon

Mix all ingredients together in the order listed, mix well and place in a greased loaf pan and bake at 350F for approximently 1 hour.

Orange Bread Recipe

Rind (peel) of 3 oranges-cut into small pieces, boil in salted water until tender-about 15 minutes, drain well, add 1 cup sugar, 1/2 cup cold water, boil for 3 minutes. Cool.Sift 3 cups flour, 1/2 tsp salt, 5 level tsps baking powder. Beat 1 egg and 1 cup milk together in a bowl. Add half of the flour mixture to orange mixture and mix, add balance of flour mixture and mix well. Bake in a loaf pan at 350F for approximently 1 hour.

Note: Instead of rind (peel) you can use French's Orange Peel, use judgement to make up the equivalent of 3 rinds.
