Cheesecake Cupcakes Recipe

  • 2 (8oz) pkgs cream cheese
  • 1 tsp vanilla
  • vanilla wafers
  • foil cupcake liners
  • 3 eggs
  • 1/2 cup sugar
  • fruit pie filling

   Beat together cream cheese, eggs, vanilla and sugar. Line muffing tin with liners. Add a wafer in each cup, then add mixture. Bake at 350F for 20 minutes. Top with fruit filling. Chill before serving. Makes 12.

Chocolate Almond Cake Recipe

Chocolate Almond Cake
  • 1/3 cup vegetable oil
  • 2 squares semi-sweet chocolate
  • 3/4 cups water
  • 1 cup sugar
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp almond extract
  • 1 small bag semi-sweet chocolate chips
  • almond slices
 Heat oil and the chocolate squares in an 8-inch square pan at 350F for 4 minutes. Add water, sugar, egg, flour, baking soda, and extract. Beat till smooth. Sprinkle chocolate chips and almond slices on top. Bake at 350F for 40 minutes.

Oreo Cookie Cake Recipe
  • 8 cups (2 litres) Vanilla Ice Cream
  • 1/4 cup melted butter
  • 450 or 600 gram pkg Oreo Cookies
 Place ice cream in refrigerator to soften a little. Crush entire pkg or Oreo Cookies in a food processor, using on and off motion until cookies are coarsely fround. Place 1 1/2 cups cookie crumbs in a dish. Stir in melted butter until well mixed. Liberally grease bottom and sides of a 9 inch springform pan with butter. Firm;y press butter crumb mixture evenly over bottom of pan. Stir in another 1 1/2 cups cookie crumb mixture into softened ice cream. Pour into springform pan. Sprinkle remaining crumbs over top. Place in freezer until firm (at least 24 hours).

Cream Cheese Sponge Cake Recipe

  • 8 oz cream cheese
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 tbsp vanilla or rum
  • 8 oz butter
  • 2 cups all purpose flour
  • 3 tbsp baking powder
In a small bowl beat 4 eggs and set aside. In a mixing bowl, put in cream cheese, butter and sugar and keep on creaming, add vanilla or run then the beaten eggs and mix well all together. Keep adding the flour and baking powder a little at a time and keep on mixing until you use up all the flour and baking powder. Mix well. In a pan large enough to hold or take all this batter, fill just half full, leaving enough space for the cake to rise when baking. Bake in preheated oven 350F for 45 minutes or until toothpick inserted in center comes out clean.

Grandmas Applesauce Cake Recipe

  • 4 cups applesauce (hot)
  • 1 tbsp baking soda
  • 1 tsp cloves
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp mace
  • 1/2 lb butter or shortening
  • 2 cups brown sugar
  • 1 tbsp molasses
  • 1 bottle cherries (red and green)
  • 1 cup walnuts
  • 2 cups raisins
  • 2 cups currants
  • 1 pkg mixed peel
  • 5 + 1 cups flour

Mix hot applesauce, soda and spices. Add to well mixed brown sugar and melted butter. Add 5 cups of flour. Blend 1 cup flour with raisins, currants and peel. Add fruits and nuts. Mixture should be moist. Prepare pans as you would for fruitcake, (wax paper). Bake at 350F for one hour.

Cherry Cake Recipe

  • 1 cup margarine
  • 1 1/2 cups sugar
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1 cup hot milk
  • 1/2 to 1 lb maraschino cherries
  • 1/2 cup cherry juice

Cream sugar and margarine. Add eggs, one at a time, beating between additions. Add cherry juice, mix. Sift dry ingredient together. Add to batter alternately with hot milk (begin and end with dry ingredients). Lightly flour cherries and fold into batter. Pour into a greased tube pan. Bake at 350F for approximently 1 hour.

Carrot Cake Recipe

  • 2 cups flour
  • 1 tsp salt
  • 2 cups sugar
  • 4 large eggs
  • 2 tsp cinnamon
  • 1 small can crushed pineapple
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 1/2 cups vegetable oil
  • 2 cups grated carrots
  • 1 tsp vanilla

        icing sugar

Combine flour, baking powder, baking soda, salt and cinnamon together. In a seperate large bowl, combine oil and sugar, beat with electric mixer, add eggs one at a time. Beat well. Sift flour mixture into egg mixture and beat well. Stir in remaining ingredients. In a greased pan spread batter mix evenly. In a preheated oven 350F bake for 1 hour or until cake is done. Cool in pan for 5 minutes, then dust with sifted icing sugar to serve.

Chocolate Cheesecake Recipe

Chocolate Cheesecake Recipe

  • 1 cup crushed chocolate wafers
  • 3 tbsp melted butter

note* or ready made chocolate crust

Combine crumbs and butter, press into bottom of 9 inch springform pan, Bake at 350F for 10 minutes.

  • 3 pkg (250g) cream cheese, softened
  • 3 large eggs
  • 3 oz white chocolate, melted
  • 2 tbsp Raspberry Schnapps (opt)
  • 3/4 cups sugar
  • 1 tsp vanilla
  • 3 oz semi sweet chocolate, melted

In food processor or with electric mixer, blend cream cheese and sugar. Add eggs, one at a time, mixing well after each addition. Add vanilla. Remove 1/2 of the batter to another bowl. Stir in melted white chocolate and liqueur into this portion. To remaining batter, blend in melted chocolate. Pour the chocolate batter in crumb lined pan; spread evenly. Spoon white batter carefully over top; spread evenly. Bake at 425F for 10 minutes; reduce heat to 350F. Bake for 30 to 35 minutes longer or until center of cake is barely firm. Remove from oven and run knife aroung sides; Let cool completely before removing sides.

Glaze:

  • 3/4 cup whipping cream
  • 6 oz semi sweet chocolate, chopped

In a small heavy saucepan bring cream to a simmer over low heat. Add chocolate and stir until melted and smooth. Spoon over cake. With metal spatula spread to cover top, allowing some to run over edge to cover sides. Garnish as desired. 12 - 16 servings.

Walnut Cake Recipe

  • 7 eggs
  • 1 cup milk
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tbsp powdered cloves
  • 2 cups sugar
  • 1 cup oil
  • 1 tbsp baking powder
  • 1 lemon and 1 orange (juice and rind)
  • 1 tbsp cinnamon

Beat eggs and sugar, add oil, simmer until warm. Remove from heat, add remaining ingredients. Bake for 1 hour at 350F. While cake is still hot, cut in pieces in pan, add syrup to soak into cake.

Syrup:

  • 4 cups water, 2 cups sugar - simmer.

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 cup margarine
  • 1 tsp vanilla
  • 2 eggs
  • 2/3 cup hot milk

Cream margarine and sugar together. Add eggs and mix well. Add 1/2 cup flour, baking powder and salt. Beat well. Slowly add hot milk and vanilla. Stir well, then add remaining 2 cups flour. Pour into greased and floured pan. Bake at 350F for 50 - 60 minutes until toothpick comes out clean.

Lemon Pound Cake Recipe

  • 1 cup butter or margarine, softened
  • 4 eggs
  • 1 tbsp grated lemon tind
  • 2 cups flour
  • 1 1/4 cups sugar
  • 1 tsp lemon extract
  • 1/2 tsp salt
  • 1/3 cup milk

Glaze:

  • 2 tbsp lemon juice
  • 1 1/4 cups icing sugar

Heat oven to 300F. Generously grease and flour 6 cup fluted tube pans. In a medium bow, beat butter until creamy. Gradually beat in sugar. Add eggs, one at a time, beating until blended. Add lemon extract, rind and salt. Alternately stir in flour and milk into batter, mixing until blended. Pour into pan. Bake 1 to 1 1/4 hours, until wooden pick comes out clean. Transfer pan to wire rack and cool cake in pan for 10 minutes. Remove cake from pan to wire rack to cool completely. Make glaze: In a small bowl gradually stir lemon juice into sugar. Drizzle over cake. Let stand until set.

Lemon Jello Cake Recipe

Lemon Jello Cake Recipe

  • 2 pkg lemon jello
  • Graham cracker crumbs
  • 2 envelopes Dream Whip
  • 1/2 cup Orange or pineapple juice

Note: Springform pan is recommended.

Make lemon jello as directed on package, reducing cold water to 1/2 cup. Chill until firm (about 3 hours). Cut into cubes when ready to assemble.

Make a graham cracker crust using 1 1/2 cups graham cracker crumbs and 1/3 cup butter or margarine. Press into springform pan and chill.

Dissolve the second package of lemon jello in 1/2 cup orange or pineapple juice and 1 cup boiling water. Chill just until slightly thickened.

Prepare the 2 packages of dream whip (as directed on box). Fold into slightly thickened jello and lemon jello cubes.

Spread over graham cracker crust and chill until firm (4 hours or overnight).

Makes 12 servings. Other colours may be used, use your imagination.

Chocolate Snack Cake Recipe

  • 1 cup flour
  • 1 cup finely rolled Ritz cracker crumbs (about 28 crackers)
  • 1/4 cup cocoa
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 cup oil
  • 1 tbsp vinegar
  • 1 tsp vanilla
  • 1 cup cold water
  • 1/2 cup chopped nuts (opt)

Mix dry ingredients together thoroughly. Add liquids & stir just until well blended. Stir in nuts if desired. Pour into greased 9 inch square pan. Makes 12 cupcakes. Bake at 350F for 25 to 30 minutes.

If you want to add icing, just sprinkle with chocolate chips while cake is still hot, let stand until softened then spread with a knife.

1/2 cup shortening
1 tsp baking powder
1 cup sugar
1 tsp baking soda
1 can tomato soup
1 tsp cinnamon
2 cups flour
1 tsp crushed cloves
