Banana Bread Recipe

  • 1 3/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/3 cup shortening or margarine
  • 2/3 cups sugar
  • 2 eggs
  • 2/3 cups mashed banana

Sift together flour, soda, salt, and baking powder. In another bowl, cream shortening and sugar, slowly beat in eggs. Stir in dry ingredients alternately with mashed banana. Stir well. Grease pans (muffin or loaf). Preheat oven to 350F. Bake loaffor 70 minutes or until nice and brown. Muffins bake for approximently 20 minutes.

Raisin Bran Muffins Recipe

  • 1/4 cup "lite" margarine or butter
  • 1/2 cup brown sugar (firmly packed)
  • 5 tsp baking powder
  • 3/4 cup butter
  • 1 cup raisins
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup sugar

In a large bowl combine dry ingredients. Cut in butter or margarine until mixture is fine. Combine eggs and milk, mix gently. Add raisins. Press out carefully with fingers. Cut with a cookie cutter. Bake at 400F for 15 minutes. Best in a 9 x 12 pan with sides of each bun touching.

Low Fat High Fiber Bran and Carrot Muffins Recipe

  • 1 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cupo shredded carrots
  • 1/2 cup vegetable oil
  • peel of a lemon or orange (opt)
  • 1 1/2 cup "All Bran" cereal
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 cup raisins or dates
  • 1 3/4 cups sour milk
  • 1 egg

Mix all ingredients together as listed above. Drop batter into muffin tins. Bake for 20 minutes at 400F. Makes 12 muffins. 213 calories per muffin.

Tasty Apple and Honey Bran Muffins Recipe

  • 1 cup milk
  • 1 egg
  • 1/4 cup liquid honey
  • 1 1/2 cups whole wheat flour or all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/3 cup apple sauce
  • 1 1/2 cups bran cereal
  • 1/4 cup firmly packed brown sugar
  • 1/2 tsp baking powder

Combine milk and lemon juice, set aside. Beat egg, apple sauce and honey, add in soured milk. Stir in bran cereal. Combine remaining ingredients in another bowl. Stir liquid mixture into dry ingredients. Spoon batter into greased muffin tins. Bake at 400F (200 C) for 15 to 20 minutes. Makes 12 muffins.

Apple Muffin Recipe

  • 1/4 cup shortening or margarine
  • 1/2 tsp vanilla
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 1/2 cups chopped apples
  • 3/4 cup white sugar
  • 1 egg, beaten
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1 tbsp cream

Cream together shortening and sugar. Add vanilla and beaten egg. Stir together dry ingredients and add stirring just to moisten. Add apples and cream gently. Fill greased muffin cups and bake at 350F for 20 to 25 minutes.

Old Fashion Bran Muffins Recipe

  • 1 cup whole Bran cereal
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup shortening
  • 1 cup flour
  • 1/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt

Preheat oven to 400F. Combine cereal & milk, let stand until most of the milk has been absorbed. Add eggs & shortening, beat well. Sift together flour, sugar, baking powder & salt, add to cereal mixture, stirring only until combined, fill greased muffin tins 3/4 full. Bake 25 minutes or until muffins are lightly browned.
