Sweet Potato Pie Recipe

  • 3 Large Sweet Potatoes / Yams
  • 4 tablespoons Margarine
  • 1 cup Sugar
  • 1 teaspoon Vanilla
  • 1 teaspoon Nutmeg
  • 1 tablespoon Lemon Juice
  • 1/2 cup Sour Mash Burbon
  • Boil and mash potatoes as you would regular mashed potatoes. Add remaining ingredients. Pour into single 9-inch pie shell. Bake at 325 degrees for 45 minutes. Top with whipping cream if desired.

    Apple Mincemeat Recipe

    • 1/2 cup apple juice
    • 4 1/2 cups raisins
    • 3/4 tsp butter
    • 2 tsp crushed cloves
    • 1/4 cup corn syrup
    • 1 1/2 lb chopped apples
    • 2 cups currants
    • 4 tsp cinnamon
    • 2 tsp nutmeg
    • zest and juice of 2 lemons

       Put all of the above ingredients into a large pan. Stir well and simmer on the stove for 40 - 50 minutes. Remove and add 1/4 cup brandy or apple juice. Best if made 4 - 6 weeks before using in tarts and pies.

    Blueberry Pie Recipe

    * Make pastry dough for a two-crust pie

    • 1 cup sugar
    • 1tbsp lemon juice
    • 3 tbsp flour
    • 1/8 tsp salt
    • 4 cups fresh or frozen Blueberries
    • 1 tbsp butter
    • 1 - 2 tbsp Minute Tapioca

    Preheat oven to 425F. Line the pie pan with half the pastry dough. For fresh berries, wash and check for any bad berries, If you are using frozen berries, it is not necessary to to defrost them completely. Mix the flour, sugar, salt and tapioca in a large bowl. Add the berries and lemon juice and toss well. Pile the mixture into the lined pan and dot with butter. Roll out the top crust and place on top of pie. Flute or crimp the deges to seal them, cut several vent holes int the top. Bake for 10 minutes, then lower the heat to 350F, bake for 30 - 40 minutes or until the top is golden brown.

    Pumpkin Pie Recipe

    • 3 eggs
    • 1/2 cup brown sugar, packed
    • 1/2 tsp salt
    • 1/2 tsp ginger
    • 1 tsp vanilla
    • 1 1/2 cups cooked or canned pumpkin
    • 1/2 cup sugar
    • 1 1/2 tsp cinnamon
    • 1 1/2 tsp nutmeg
    • 1 1/2 cups evaporated milk

       Preheat oven to 450F. Beat eggs with electric mixer in a large bowl for 1 minute. Add remaining ingredients and beat until blended, about 1 1/2 minutes, scraping bowl occasionally. Pour into deep unbaked 9" pie shell which has been chilled. Bake for 10 minutes, reduce heat to 350F and continue baking for 45 minutes or until knife inserted in center comes out clean. Serve slightly warm with whipped cream.

    Sugar Pie Recipe

    • 2 cups brown sugar
    • 1/4 cup butter
    • 1/3 cup flour
    • 1 1/2 cups hot milk
    • 1 cooked pie shell

    Mix the sugar and flour together in a bowl. In a pot, pver medium heat, add milk and butter, warm this up, slowly add sugar/flour mixture stirring constantly until thickened. Pour into pie shell and set aside to cool.

    Fried Apple Pies Recipe

    • 2 cups flour
    • Dash of nutmeg
    • 1/2 tsp salt
    • 1 tsp sugar
    • 1/2 cup shortening
    • 1 tsp vinegar
    • 5 tbsp water
    • 1/2 cup apple sauce
    • Fat for frying
    • Confectioner's sugar

    Sift together dry ingredients, add vinegar & water, mix until just blended. Roll dough 1/8 inch thick, cut into circles using a saucer as a guide. Put a tablespoon of apple sauce on each round. Fold pastry to cover apple and press edges together with lines of a fork. Fry in Hot deep fat until golden brown. Drain on paper towel. Sprinkle with confectioner's sugar. Serve hot or cold.
