Meat Mixture:
- 3lbs lean boneless pork
- 2 cloves garlic, minced
- 1/4 cup hoisin sauce
- 1/4 cup sugar
- 1/2 tsp pepper
- 2 tbsp rice wine/sherry
Sauce:
- 1 (19oz) tine pineapple chunks
- 2 tbsp ketchup
- 2 tbsp cornstarch
- 4 small onions, quartered
- 1/2 cup rice wine vinegar
- 1/4 cup brown sugar
- 2 green peppers (chunks)
Meat Mixture: Cut meat into 1" cubes and place in 16 cup casserole. Mix in garlic. In a small bowl, mix together the balance of the ingredients and pour over meat, coating well. Cover and marinate in fridge for 2 - 4 hours. Transfer casserole to oven to oven and bake at 375F for 1 hour.
Sauce: While the meat is baking, draioning pineapple and reserve juice. Measure 1 1/2 cups of juice and water. Combine in saucepan with vinegar, ketchup, sugar and cornstarch. Cook over medium heat, stirring until thickened. About 3 minutes. Add pineapple, green peppers and onions. When meat is cooked, drain fat and stir in sauce.

- about 5 lbs pork ribs
Sauce:
- 1 cup applesauce
- 2 cups brown sugar
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp cinnamon
- 1/2 cup ketchup
- 6 tbsp lemon juice
- 1/2 tsp pepper
- 1/2 tsp minced garlic
Mix all sauce ingredients together in a pot. Heat to boiling. Steam ribs slowly until 75% done. Drain & rinse. Coat ribs with sauce. Reserve rest for basting during baking. Bake Ribs at 300F for 1 - 1 1/2 hours.
