Baked Chicken Salad Recipe

salad recipes
  • 2 c. cubed chicken
  • 2 c. celery, sliced
  • 1 (10 oz.) pkg. frozen green peas
  • 1/2 c. slivered almonds
  • 2 tbsp. green pepper
  • 1 tbsp. grated onion
  • 2 tbsp. diced pimento
  • 2 tbsp. lemon juice
  • 1/2 tsp. salt
  • 3/4 c. mayonnaise
  • 1 c. grated cheddar cheese

Combine all ingredients thoroughly. Turn into buttered 2 quart casserole. Sprinkle with cheese and bake at 350 degrees for 25 minutes or until cheese is melted. Makes 10 servings and this can be frozen

Raspberry Salad Dressing

  • 1 cup of frozen unsweetened raspberries, thawed
  • 4 teaspoons of white wine vinegar
  • 3 teaspoons granulated sugar

In a blender process the raspberries until smooth. Add vinegar and sugar and blend until well mixed. Serve over green salad or fresh fruit.

Peachy Beef Toss

salad recipes
  • 1 head romaine lettuce, torn
  • 3 cups fresh spinach, torn
  • 1 1/2 cups cooked roast beef cut in strips
  • 3 fresh medium peaches, peeled, pitted and sliced
  • 1 medium ripe avocado, peeled, pitted and sliced
  • 12 cherry tomatoes, halved
  • 1/2 cup vegetable oil
  • 3 tablespoons vinegar
  • 1 tablespoon prepared horseradish
  • 1/2 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon pepper
  • 2 drops hot pepper sauce

In a salad bowl combine romaine, spinach, cooked roast beef, slice peaches, sliced avocado and cherry tomato halves.

In a screw-top jar combine oil, vinegar, horseradish, salt, Worchestershire sauce, pepper and hot pepper sauce. Cover and shake well.

To serve, pour dressing over salad and toss. Serves 6.

Beef Supper Salad

  • 1/3 cup mayonnaise or salad dressing
  • 1/4 cup chili sauce
  • 1 tbsp sweet pickle relish
  • 1/2 tsp salt
  • Dash of pepper
  • 1 8-oz can red kidney beans
  • 2 cups cubbed cooked beef
  • 1 cup sliced celery
  • 1/2 cup chopped onion
  • 2 hard-cooked eggs, chopped

Blend together mayonnaise, chili sauce, sweet pickle relish, salt and pepper. Drain kidney beans and combine with beef, celery, onion and eggs. Add dressing mixture and toss lightly. Cover and refrigerate up to 24 hours. Stir salad before serving.

  • 2 medium cucumbers, shredded
  • 1 tbsp vinegar
  • 1 tsp salt
  • 1 cup sour cream
  • 1 tsp sugar
  • pinch of pepper

Combine above ingredients in a bowl. Chill and serve.

Light and Easy Summer Salad Recipe

  • 1 pkg Ramen Noodles
  • 4 cups shredded cabbage (1L)
  • 4 cups chopped green onions
  • 1 1/2 tsp salt (7ml)
  • 2 tbsp sesame seeds (25ml)
  • 2 tbsp sugar (25ml)
  • 2 tbsp oil (25ml)
  • 1/2 tsp pepper (2ml)
  • 1/2 cup slivered almonds (125ml)

Pour hot water over noodles in a colander. Mix noodles with cabbage and onions, adding seasoning packet (which comes with the pakg of noodles). Combine noodle mixture with sesame seeds, sugar, oil, pepper and almonds. Add chopped, cooked chicken if desired. Arrange on a bed of lettuce. Serves 4.

24 Hour Salad Recipe

  • leaf lettuce
  • broccoli
  • cauliflower
  • red onion
  • 1 cup parmesan cheese
  • 1 lb cooked bacon, crumbled

Layer these ingredients in a glass salad bow in the order listed.

Mix:

  • 3/4 cup mayonnaise
  • 1 cup garlic salad dressing
  • 1 tsp lemon juice
  • pepper

Spread over the top of the salad and refrigerate for 24 hours.
