Cabbage and Pasta Soup

soup recipes
  • 6 leaves of white cabbage
  • 1 tablespoon olive oil
  • 1 chopped clove of garlic
  • 1 slice of bacon, diced
  • 3 1/2 cups chicken stock
  • salt and pepper to taste
  • 5 oz small pasta shells

Cut the cabbage into thin strips. Heat olive oil in a saucepan and fry the garlic, bacon and cabbage together for 2 minutes, stirring regularly.

Add the stock and season with salt and pepper. Bring to a boil and cook over moderate heat for 15 minutes, stirring occasionally.

Add the pasta to the soup, stir and cook for 15 minutes.

Adjust the seasoning and serve.

Lentil and Barley Soup Recipe

Lentil and Barley Soup Recipe

  • 500 gr ground beef (lean)
  • 1 cup pearl barley
  • 1 large onion, chopped
  • 1 large rib celery,diced
  • 1  bay leaf
  • large pinch thyme
  • 1 cup split yellow or green lentils
  • 6 cups beef bouillon
  • 1 large carrot, diced
  • 2 cups tomatoes, canned or fresh, chopped
  • 1 clove garlic, minced
  • basil to taste

Brown beef lightly in large pot. Add lentils, barley and bouillon. Simmer covered 1/2 hour. Add remaining ingredients and simmer for about 1 1/2 hours. Add salt and pepper to taste. Serves 6-8.

Minestrone Soup Recipe

  • 1 1/2 lbs lean ground beef
  • 1 celery stalk, chopped
  • 2 (10 oz) can onion soup
  • all kinds of veggies
  • chopped parsley
  • 1/2 tsp each of thyme, oregano, basil (or to taste)
  • 1 onion, chopped
  • 1 (28 oz) can tomatoes
  • 5 cups water
  • 1 jar (or homemade) spaghetti sauce
  • 1 cup (handful) small pasta
  • 1 1/2 tsp sugar
  • salt & pepper (to taste)
  • grated parmesan cheese

In a large saucepan brown ground beef lightly. Add onion and celery; cook until softened. Add tomatoes, onion soup and water. Bring to a boil. Add vegetables; cover and simmer for 30 minutes. Add spaghetti sauce, pasta, parsley, sugar, herbs, salt and pepper (if needed). Simmer uncovered for 30 minutes, stirring occasionally. Sprinkle each serving with grated parmesan cheese. Great as a meal.

Cream of Carrot Soup Recipe

  • 4 large carrots, cut into chunks
  • 1 stalk celery with leaves, in chunks
  • 1 1/2 cups chicken broth
  • pinch of cayenne pepper
  • 1 medium onion, sliced
  • 1 medium potato, peeled and cut up
  • 1 tsp salt
  • 3/4 cup of 10% cream

Simmer vegetables in 1/2 cup chicken broth, covered, for 15 minutes. Put vegetables and liquid into food processor. Add salt and cayenne pepper. Cover, puree on high until smooth. Pour into soup pot and add 1 cup chicken broth, reheat. Stir in the cream just before serving. Serve hot. (Can be reheated in a double-boiler or in the microwave). Makes 4 servings.

Hamburger Soup Recipe

  • 1 1/2 lb ground beef
  • 1 medium onion, chopped fine
  • 28 oz can tomatoes
  • 2 cups water
  • 3 cans (10 oz) consommee
  • 1 can (10 oz) tomato soup
  • 4 carrots, chopped fine
  • 3 sticks celery, chopped fine
  • 1 tsp thyme
  • parsley
  • pepper to taste
  • 8 tbsp barley

Brown meat and onion, Drain well. Combine all ingredients in a large pot. Simmer, covered at least two hours or all day if possible.

Meatball Beef Soup Recipe

Meatball Beef Soup Recipe

         Meatballs                                 

  • Beef
  • Romano cheese
  • Italian bread crumbs
  • salt & Pepper
  • Dry onions
  • Fresh garlic (or powder) (opt)
  • Egg

        Stock

  • 2 tins beef consomme
  • 2 tins water
  • 2 tbsp tomato paste
  • little tomato juice
  • oxo cube (if more liquid needed)
  • can tomatoes (opt)

Mix all ingredients together for meatballs. Make stock and allow to simmer. Roll meatballs small and add to stock uncooked. Allow to simmer. If eating soup the same day, add pasta, if not freeze the stock and meatballs.

Corn and Rice Soup Recipe

  • 3 cans cream corn
  • 1 can corn nibblets
  • Lots of Butter
  • Water & onion chopped fine

Cook rice in seperate pot. Bring corn, butter & water to foaming boil. Add rice, salt & pepper to taste.

Chicken Soup with Meatballs Recipe

  • 6 cups of water to boil
  • Instant chicken soup mix = approx 1 tsp per cup water

Meatballs:

  • Hamburger
  • fresh garlic
  • salt & pepper
  • romano cheese
  • Pastene Italian flavored bread crumbs
  • 1 egg

Mix together all ingredients together and form into meatballs.

Green Chilots and soup noodles.

Boil water add soup mix. Roll meatballs small and add to soup mix uncooked. Add chilots cut small. Cook soup noodles seperately if your going to freeze the soup, this will stop soggy pasta.

  • 1 can tomato soup

  • 8 tbsp barley

Brown meat and onions. Drain well. Combine all other ingredients. Simmer at least two hours.

Cream Cauliflower Soup Recipe

  • 1 med head cauliflower, cut into flowerets
  • 1/4 cup butter
  • 2/3 cup chopped onions
  • 2 tbsp flour
  • 2 cups chicken broth
  • 2 cups light cream
  • 1/2 tsp worchestershire sauce
  • 3/4 tsp salt
  • 1 cup finely grated cheddar cheese (opt)
  • Chopped chives

Cook cauliflower in boiling salted water, until soft; drain but keep liquid. Melt butter, add onion and cook until soft. Blend in flour: add broth and cook, stirring constantly until mixture comes to a boil. Stir in 1 cup liquid, drained from cauliflower, adding enough water to make 1 cup. Add cream, worchestershire sauce and salt, heat to boiling. Stir in cheese (opt). Serve sprinkled with chopped chives.

Chicken Tomato Soup Recipe

Chicken Tomato Soup Recipe

  • 2 tbsp butter
  • 1 large onion chopped
  • 1/2 clove garlic minced
  • 2 sprigs of parsley
  • 1-19 oz can tomatoes
  • salt & pepper to taste
  • 4 cups chicken broth
  • 1/2 cup soup noodles

*Note: You can use 2 chicken bouillion cubes in 4 cups of water, to replace chicken broth.

Sautee onions and garlic in butter until soft. Add parsley, tomatoes, salt & pepper. Simmer for 25 minutes, stirring often and breaking up tomatoes with wooden spoon. Add chicken broth, simmer for 30 minutes. Remove parsley, add soup noodles and simmer for 7 to 10 minutes more.

Chicken Soup Recipe

  • Fill pot with water, put in chicken carcass and boil until chicken is tender, remove carcass and cut remaining chicken off bone, place chicken in original water. Add one tin of tomatoes that has been put through blender, add potatoes, carrots, pepper and dried onions. allow to cook until vegetables are tender then add noodles. Add any other vegetables that you like.

* Note: Remove bones from water and chicken before adding vegetables.
