During summertime, there are various activities that you want your family to get involved into. This way, it will be easier for you to come up with their recommendations. And there will be lesser rooms for errors once you start on this venture.

This way, you will be able to gauge what you can do depending on your capabilities as a cook and how much time you have on your hands. If you don't want to buy your own, you can go at your local library and copy the recipes on books that will fit such purpose.

4. You must also take advantage of the Internet and browse through the available recipes that you can use for this purpose. You have to bear in mind that this will give you vast results. Do not get too excited. If there are user ratings on the recipes provided, you must take time to read those. It will give you clear idea if it's worth taking the chance of creating the recipe. You must learn from other people's experiences so that you won't have to go through the mistakes that they have done when they tried the provided recipe.

Once you have a good list of easy and quick summer recipes, you must proceed in learning all those even if it is still not summertime. This way, you will be able to serve what your family deserves when it is already time to have these done.

Breakfast Milkshake

Uncategorized
  • 1/2 cup of chopped pineapples
  • 3/4 cup of plain yogurt
  • 1 1/2 cup frozen unsweetened fruit (berries,peaches,kiwi)
  • 1 tsp. sugar

Place ingredients in blender and puree at medium speed until thick and smooth. Makes 2 1 1/2 cup servings.

Ham and Vegetable Salad

  • 1 lb. extra-lean, boneless ham
  • 1 pkg (10 oz.) frozen mixed vegetables, thawed
  • 4 cups torn, red-leaf or iceberg lettuce
  • 2 cups torn, fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/2 cup bottled zesty Italian salad dressing

Thinly slice ham into 1/4 inch strips. Drain frozen vegetables on paper towels. On largee serving plate, place lettuce and spinach. Arrange ham and tomatoes over greens. Sprinkle with vegetables and drizzle with dressing. Serve immediately. Serves four.

Rice and Vegetable Casserole (gluten free)

  • ¾ cup of white or brown rice
  • ½ teaspoon of salt
  • 1 cup of mushrooms, quartered
  • 1 cup of sliced carrots
  • One 15 ½ ounce can of kidney beans, drained and rinsed
  • ½ cup cashews
  • 3 tablespoons chopped fresh parsley
  • ¼ cup chopped onion
  • ½ teaspoon garlic salt
  • 1 ½ cups of gluten free vegetable broth
  • ½ cup grated Cheddar cheese

Preheat oven to 350 degrees. Pour rice in the bottom of a 2 quart casserole dish and sprinkle the salt. Mix in a bowl the mushrooms, carrots, beans, cashews, parsley, onion and garlic. Add the vegetable broth.  Pour mixture over the rice, cover and bake for about one hour, stirring once at 30 minutes. Remove, sprinkle on the cheese and let stand 5 minutes for the cheese to melt.

Broccoli Bake (gluten free)

  • 1 ½ cups crumbled GF Bread
  • 1 ½ cups of chopped broccoli
  • 3 eggs lightly beaten
  • ¾ cup milk or non dairy liquid
  • 1 cup of grated Cheddar cheese
  • ¼ cup melted butter or margarine
  • 1 teaspoon of salt
  • 1 tablespoon of sugar

Preheat oven to 350 degrees. Spray an 8" square baking dish with vegetable oil spray. Cover the bottom of the dish with the bread and then spread the broccoli on top. Mix together all of the remaining ingredients and pour over the broccoli and bread. Cover with foil and bake for 35 minutes.

For a variation, you can use cauliflower instead of broccoli.

Pumpkin Pie Recipe

  • 3 eggs
  • 1/2 cup brown sugar, packed
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1 tsp vanilla
  • 1 1/2 cups cooked or canned pumpkin
  • 1/2 cup sugar
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp nutmeg
  • 1 1/2 cups evaporated milk

   Preheat oven to 450F. Beat eggs with electric mixer in a large bowl for 1 minute. Add remaining ingredients and beat until blended, about 1 1/2 minutes, scraping bowl occasionally. Pour into deep unbaked 9" pie shell which has been chilled. Bake for 10 minutes, reduce heat to 350F and continue baking for 45 minutes or until knife inserted in center comes out clean. Serve slightly warm with whipped cream.

Old Fashioned Pumpkin Pie Recipe

Prepare Pastry for one-crust pie. 9 inch pie plate

  • 3 eggs, slightly beaten
  • 1/2 cup firmly packed brown sugar
  • 1/2 tsp salt, nutmeg, allspice, ground cloves
  • 1 1/2 cups pumpkin, cooked or canned
  • 1/2 cup sugar
  • 1 tbsp flour
  • 1 tsp cinnamon
  • 1 1/2 cups carnation milk, heated

Beat 3 eggs slightly, blend in sugar, flour and spices. Add pumpkin and gradually add heated carnation milk. Turn into prepared pan. Bake at 450F for 10 minutes, then at 350F for 40 to 50 minutes or until knife inserted comes out clean.

Chocolate Almond Cake Recipe

Chocolate Almond Cake
  • 1/3 cup vegetable oil
  • 2 squares semi-sweet chocolate
  • 3/4 cups water
  • 1 cup sugar
  • 1 egg
  • 1 1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp almond extract
  • 1 small bag semi-sweet chocolate chips
  • almond slices
 Heat oil and the chocolate squares in an 8-inch square pan at 350F for 4 minutes. Add water, sugar, egg, flour, baking soda, and extract. Beat till smooth. Sprinkle chocolate chips and almond slices on top. Bake at 350F for 40 minutes.

Lemon Bread Recipe

Lemon Bread Recipe

  • 1 cup sugar
  • 2 eggs, beaten
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup shortening or butter
  • 1/2 cup milk
  • rind of 1 lemon, grated
  • 1/2 tsp salt

In a bowl mix all ingredients together in the order above. Pour mixture into a greased loaf pan. Bake at 325F for 1 hour. Remove from pan and brush the following mixture over the top, sides and bottom;

  • 1/4 cup sugar dissolved in the juice of one lemon.

Leave on platter to cool, loosely cover with saran wrap for 24 hours.

Strawberries and Cream Bread

  • 1 3/4 cups flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup butter, room temperature
  • 3/4 cup sugar
  • 2 eggs, room temperature
  • 1/2 cup sour cream, room temperature
  • 1 tsp vanilla
  • 1 cup coarsely chopped fresh strawberries
  • 3/4 cup toasted chopped walnuts, if desired

Grease an 8 x 4 inch loaf pan; set aside. Preheat oven to 350F. In a large bowl, combine flour, baking powder, baking soda, salt and cinnamon; side aside. In small bnowl, cram butter. Gradually add sugar; beat one minute or until light and airy. Beat in eggs, one at a time. Beat in sour cream and vanilla. Stir into flour mixture only until dry ingredients are moistened. Fol in strawberries and nuts if desired. Turn into prepared pan. Smooth top. Bake 60 to 65 minutes or until a wooden pick inserted into centre comes out clean. Let stand in pan 10 minutes. Turn out onto a rack to cool. Makes 1 loaf.

Chocolate Brownies Recipe

Chocolate Brownies Recipe

  • 2 cups sugar
  • 2 cups flour
  • 1 tsp baking soda
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 1/4 lb margarine
  • 1/2 cup shortening
  • 1/4 cup cocoa
  • 1 cup water

Sift flour, sugar and soda together in a large bowl. Bring margarine, water, cocoa and shortening to a boil. Pour over flour mixture and mix well. Add remaining ingredients, Pour into greased 15 1/2 x 10 inch pan. Bake at 350F for 20 to 30 minutes.

Brownie Icing:

  • 1 stick margarine
  • 1/4 cup cocoa
  • 4 cups icing sugar (sifted)
  • 1 tsp vanilla

Mix all the above ingredients together with an electric mixer, (mix well). Spread over brownies while they are still hot. The icing melts a bit but firms up again as it cools.

Sloppy Joes Recipe

Sloppy Joes Recipe

  • 1 lb hamburger
  • 1/2 cup onion
  • 1/3 cup celery
  • 1/4 cup water
  • 5 buns, split and toasted
  • 1/2 lb bacon
  • 1/3 cup green pepper
  • 1 can tomato paste or 1/2 cup ketchup
  • 1 tbsp worchestershire sauce
  • season to taste

Cook bacon in fry pan, remove once done; cut into pieces. Cook and stir hamburger and onion until hamburger is light brown; drain; add bacon. Stir in remaining ingredients except buns. Cover and cook over low heat until vegetables are tender, 10 - 15 minutes. Fill buns with beef mixture and enjoy.
