Chocolate Coconut Cheesecake Bars Recipe

Base:  

  • 1 cup all purpose flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1/2 cup angel flake coconut

filling:

  • 1 250g pkg cream cheese, softened
  • 2 eggs
  • 2 tbsps flour
  • 1 tsp vanilla
  • 3 squares semi-sweet chocolate, melted
  • 2/3 cup sugar
  • 2/3 cup light cream
  • 1/2 tsp cinnamon

Base: Combine together flour and sugar. Cut butter into mixture until crumbly. Stir in coconut. Press firmly into a greased 8" square pan.

Filling: Cream the cheese, add melted chocolate, eggs, sugar and flour beat with electric mixer until smooth and light. Gradually add cream, vanilla and cinnamon, mixing until smooth. Pour over the base and bake at 350F for25 - 30 minutes until set. Cool. Refrigerate and cut into bars. Deizzle bars with an additional 2 squares melted semi-sweet chocolate for a fancier look.
