Light and Easy Summer Salad Recipe

  • 1 pkg Ramen Noodles
  • 4 cups shredded cabbage (1L)
  • 4 cups chopped green onions
  • 1 1/2 tsp salt (7ml)
  • 2 tbsp sesame seeds (25ml)
  • 2 tbsp sugar (25ml)
  • 2 tbsp oil (25ml)
  • 1/2 tsp pepper (2ml)
  • 1/2 cup slivered almonds (125ml)

Pour hot water over noodles in a colander. Mix noodles with cabbage and onions, adding seasoning packet (which comes with the pakg of noodles). Combine noodle mixture with sesame seeds, sugar, oil, pepper and almonds. Add chopped, cooked chicken if desired. Arrange on a bed of lettuce. Serves 4.
