- 1 1/2 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cupo shredded carrots
- 1/2 cup vegetable oil
- peel of a lemon or orange (opt)
- 1 1/2 cup "All Bran" cereal
- 1 tbsp cinnamon
- 1 tsp baking powder
- 1 cup raisins or dates
- 1 3/4 cups sour milk
- 1 egg
Mix all ingredients together as listed above. Drop batter into muffin tins. Bake for 20 minutes at 400F. Makes 12 muffins. 213 calories per muffin.
