Low Fat High Fiber Bran and Carrot Muffins Recipe

  • 1 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cupo shredded carrots
  • 1/2 cup vegetable oil
  • peel of a lemon or orange (opt)
  • 1 1/2 cup "All Bran" cereal
  • 1 tbsp cinnamon
  • 1 tsp baking powder
  • 1 cup raisins or dates
  • 1 3/4 cups sour milk
  • 1 egg

Mix all ingredients together as listed above. Drop batter into muffin tins. Bake for 20 minutes at 400F. Makes 12 muffins. 213 calories per muffin.
