Merengue Cookies Recipe

  • 4 egg whites
  • 1 cup sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • chocolate chips

Beat egg whites until almost stiff. Add sugar slowly and continue to beat until mixture forms peaks. Add lemon juice and vanilla. Add chocolate chips. Drop by spoonfuls onto baking sheet (ungreased) and cover with a thin sheet of brown paper*. Bake approx. 1 hour at 200F until slightly browned or off-white in color.

* A piece of brown paper grocery bag work well.
