Molasses Cookies Recipe

  • 1 cup molasses
  • 2 eggs
  • 6 cups flour ( 3 cups white & 3 cups whole wheat)
  • 2 pinches each, ginger, cinnamon, nutmeg
  • 1/4 cup white sugar
  • 1 cup butter, melted
  • 2 tsp baking soda, dissolved in 1 tsp water

Mix butter and sugar, add eggs and molasses. Add dissolved baking soda and then flour. Mix thoroughly. Dough will be thick and somewhat sticky. Seperate dough into four balls. Place each ball of dough onto the center of large piece of wax paper. Fold each end of the wax paper over the dough to enclose it loosely. Use your hand or a rolling pin to flatten the dough into a thick pancake. Refrigerate for 1 - 2 hours. Take one pancake out at a time. Roll to 1/8 inch thickness. Cut into shapes. Cook in preheated 325F oven for 8 minutes. Don't overbake. Delicious with confectioner's sugar put on warm cookies.
