Peachy Beef Toss

  • 1 head romaine lettuce, torn
  • 3 cups fresh spinach, torn
  • 1 1/2 cups cooked roast beef cut in strips
  • 3 fresh medium peaches, peeled, pitted and sliced
  • 1 medium ripe avocado, peeled, pitted and sliced
  • 12 cherry tomatoes, halved
  • 1/2 cup vegetable oil
  • 3 tablespoons vinegar
  • 1 tablespoon prepared horseradish
  • 1/2 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 1/8 teaspoon pepper
  • 2 drops hot pepper sauce

In a salad bowl combine romaine, spinach, cooked roast beef, slice peaches, sliced avocado and cherry tomato halves.

In a screw-top jar combine oil, vinegar, horseradish, salt, Worchestershire sauce, pepper and hot pepper sauce. Cover and shake well.

To serve, pour dressing over salad and toss. Serves 6.
