Home Peachy Beef Toss
%%CATEGORY%%- 1 head romaine lettuce, torn
- 3 cups fresh spinach, torn
- 1 1/2 cups cooked roast beef cut in strips
- 3 fresh medium peaches, peeled, pitted and sliced
- 1 medium ripe avocado, peeled, pitted and sliced
- 12 cherry tomatoes, halved
- 1/2 cup vegetable oil
- 3 tablespoons vinegar
- 1 tablespoon prepared horseradish
- 1/2 teaspoon salt
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon pepper
- 2 drops hot pepper sauce
In a salad bowl combine romaine, spinach, cooked roast beef, slice peaches, sliced avocado and cherry tomato halves.
In a screw-top jar combine oil, vinegar, horseradish, salt, Worchestershire sauce, pepper and hot pepper sauce. Cover and shake well.
To serve, pour dressing over salad and toss. Serves 6.
