Shortbread Cookies Recipe

  • 1 cup icing sugar 250ml
  • 3 cups all purpose flour 750ml
  • red and green cherries
  • 1 cup cornstarch 250ml
  • 1lb butter, at room temperature 500g

Sift dry ingredients. Cut in butter and knead until mixture holds together. Roll on lightly floured surface to 1/8" thick (3mm) and cut into various shapes. Place on ungreased cookie sheets. Decorate with cherries before placing in oven. Bake at 350F (160C) for 10 - 12 minutes or until golden brown. Cool on wire rack. Store in an airtight container. Makes about 5 dozen cookies.
