Toffee Apple Recipe

  • 1/4 cup lemon juice
  • 1 cup butter
  • 1/3 cup (packed) brown sugar
  • 3 medium apples
  • 1 cup sugar
  • 1/2 tsp baking soda

Mix lemon juice with 1 cup water. Peel & core apples. cut each apple into 8ths. Stick a colored cocktail toothpick into one end of each apple wedge. Dip into lemon mixture & place on paper towel, turning to drain well on all sides. Melt butter in a medium size saucepan, add the sugars & 3 tbsp water, mix well. Bring to boil stirring constantly, then cook without stirring to hard cracking stage or 300F on a candy thermometer. Remove form heat & stir in the baking soda QUICKLY. Hold each apple wedge by the pick & dip into the hot syrup to coat well. Place on waxed paper to cool & harden. Recipe makes 24 wedges.
